So, I decided to go ahead and go some basic window shopping on what it would cost to make my dream Toyota MR2 and it wound up being up near the $30k range, accounting for mods, parts, shop labor, and the donor car itself.
Ouch.
-$1,500 for non-running rust-free MR2
-$5,000 for K20A2 W/ 6-speed manual transmission
-$1,000 for custom shift linkage assembly
-$700 for custom mounts
-$300 for performance intake
-$600 for custom exhaust
-$5,000 for full supercharger kit w/ ECU
-$1,000 for coilover kit
-$800 for full brake system upgrade
-$1,500 for wheels and tires
-$400 for adjustable anti-roll bars front and back
-$600 for stage 2 clutch and lightweight flywheel
-$250 for short-throw shifter
-$400 for momo quick release steering wheel kit w/ hub
-$2,000 for Bride Euro II Cruz black seat x2
-$70 for Sparco Settanta shift knob
-$90 for Sparco Settanta Handbrake handle
-$1,000 for widebody bolt-on fender kit
-$600 for lightweight carbon fiber hood
-$2,000 for gunmetal gray paint w/ matte decals and hood
-$150 for hood pins
-Est. $2,000 for interior treatments (gauges, dash cover, etc.)
-Est. $4,000 in shop labor costs
And that's not even counting the little things that would pop up as I go. Again...ouch.

What are your plans? 88/89 with the S/C ripped out for a turbo would be it for me.

I edited the original post. I'm staying away from turbos (I'm a much bigger fan of superchargers) but swapping in a K20A2 with a comptech supercharger kit.
